Avocado Canapés with Yogurt Vinaigrette

Ingredients:

  • 1 ripe avocado
  • 1 large egg
  • 100g smoked salmon
  • 4 slices rye bread
  • 2 tablespoons sherry-flavored or cider-flavored yogurt
  • 125 ml olive oil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Boil the Egg: In a pot of boiling water, cook the egg for 10 minutes. After cooking, peel and cut the egg into small pieces.
  2. Prepare the Ingredients: Dice the avocado and smoked salmon into small squares. Toss the egg, avocado, and salmon with a little lemon juice to prevent browning.
  3. Prepare the Bread: Cut the rye bread into 3 pieces per slice to create small canapés.
  4. Make the Vinaigrette: Peel and crush the garlic clove. In a bowl, combine the garlic with yogurt, olive oil, and a pinch of sugar. Mix well to create the vinaigrette.
  5. Assemble the Canapés: Spread the vinaigrette evenly onto the bread slices. Top with the egg, avocado, and salmon mixture.
  6. Serve: Arrange the canapés on a platter and serve immediately. Enjoy!
